Steak being flame-grilled
The Philosophy

Fire is the oldest way to cook. We never saw a reason to stop.

Blackstone began with a conviction held by our founders: that the finest produce deserves the most honest treatment. No gimmicks, no shortcuts — just fire, smoke, salt and the patience to let each cut speak for itself.

Our kitchen is built around a single open-flame grill, where every steak is finished by hand. Behind it sits our dry-ageing room, where premium beef rests for up to forty-five days, deepening in character until it's ready for the flame.

But Blackstone is more than a steakhouse. It's a contemporary Australian table — coastal seafood, seasonal produce, a cellar built for long evenings, and a room designed to slow time. We don't serve meals. We design evenings.

What We Stand For

The Blackstone Standard

Fire First

Every steak is finished over open flame — the oldest, most honest method of cooking, and the soul of our kitchen.

Produce With a Story

We work directly with Australian graziers, fishmongers and small-grower farms to source produce we can stand behind.

Dry-Aged In-House

Our dry-ageing room is the quiet engine of the kitchen — concentrating flavour and tenderness over weeks, not days.

Hospitality, Slowed

We design evenings, not transactions. Blackstone is built for lingering — for long dinners and longer conversations.

Dark luxury steakhouse interior

A room designed to slow time.

Leather banquettes, candlelight, the low hum of conversation and the sound of flame on steel. Every detail of the Blackstone room is built for one purpose — to make an evening worth remembering.

Come sit by the flame.

The best way to understand Blackstone is to experience it. Reserve your table and let the evening do the rest.
